Ingredients:
- 1 (8 oz.) can pineapple, crushed
- 1 cup carrots, peeled and shredded
- 1 cup apples (or pears), chopped
- ½ cup peanuts
- ⅓ cup plain low-fat yogurt
- 2 tbsp peanut butter
- ¼ cup raisins (optional)
Preparation:
- Stir together the pineapple, carrots, apples, peanuts and raisins in a medium-sized bowl.
- Blend together the yogurt and peanut butter in another bowl.
- Add the yogurt dressing to the salad and stir to coat.
