Ingredients:
- 1 pound boneless, skinless chicken thighs, cut into ¾" pieces
- 4 ounces andouille or other fully cooked sausage, halved lengthwise and cut into ½" pieces
- 4 cups chicken stock
- 1 can (14.5 ounces) crushed tomatoes
- 1½ cups fresh or frozen and thawed corn kernels
- 1 cup sliced fresh or frozen and thawed okra
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 ribs celery, thinly sliced
- 2 large cloves garlic, minced
- ¾ teaspoon salt
- ½ teaspoon cajun seasoning
Preparation:
- In 5-quart or larger slow cooker, combine all ingredients. Cover and cook on low 6-8 hours. Season with salt and black pepper to taste.
