Cajun Chicken and Andouille Soup

(makes 6 servings)
Weight Loss Recipes : Cajun Chicken and Andouille Soup

Ingredients:

  • 1 pound boneless, skinless chicken thighs, cut into ¾" pieces
  • 4 ounces andouille or other fully cooked sausage, halved lengthwise and cut into ½" pieces
  • 4 cups chicken stock
  • 1 can (14.5 ounces) crushed tomatoes
  • 1½ cups fresh or frozen and thawed corn kernels
  • 1 cup sliced fresh or frozen and thawed okra
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 ribs celery, thinly sliced
  • 2 large cloves garlic, minced
  • ¾ teaspoon salt
  • ½ teaspoon cajun seasoning

Preparation:

  • In 5-quart or larger slow cooker, combine all ingredients. Cover and cook on low 6-8 hours. Season with salt and black pepper to taste.
