Ingredients:
- 4 cups (about 1 ½ lb.) coarsely chopped tomatoes
- 2 cups coarsely chopped seedless watermelon
- 2 Tbsp. olive oil
- 1 tsp. balsamic vinegar
- ½ tsp. salt
- 2 Tbsp. chopped fresh mint.
- ¼ cup chopped pistachios
Preparation:
- In large-size bowl, combine tomatoes and watermelon. Toss with oil, vinegar, salt, mint and ground black pepper to taste. Top with pistachios.
